Amazing Amazing Dill Fish

This recipe turned out AMAZING, and it’s super easy, and super healthy.

Fish:
1 lb of fish (Salmon recommended, we used Tilapia)  
1/2 cup of water
1/2 cup of white wine
3-4 fresh dill sprigs
half onion sliced.

Sauce:

1 cup of sour cream (used light)
1/2 cup of white wine
1 tbsn dry mustard
pinch of onion powder
pinch of garlic powder
3 tbs fresh dill (I used WAY more) 

Place water, wine, dill, onion in pan, salt & pepper. Heat to bubbling, then add the fish, skin down. Put the lid on the pot, and cook on high heat for a few minutes. Turn heat off and leave lid on to complete cooking.

In the mean,time (actually at the exact same time)
Mix the ingredients for the  sauce in a sauce pan, boil and reduce a bit, I added barley flour as a gluten free thickener. 

Serve with Risotto or plain rice!

Was great, the man loved it, which means it WAS good!
